Easy Cherry Pie

Equipment

  • 9 inch deep pie plate
  • Rolling Pin
  • large mixing bowl & spatula
  • small bowl & fork

Ingredients

  • 1 box (2 pcs) refrigerated pie crusts (you can make your own pie crusts for this recipe. I use my cream cheese pie crust.
  • flour for dusting work surface
  • 2 (21oz) cans cherry pie filling
  • 1 tsp almond extract
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1 large egg
  • 1 tsp water
  • 2 tsp white granulated sugar

Instructions

  • Remove pie crusts from refrigerator and sit on counter for 15-20 minutes to take the chill off. This will help with the ease of rolling out the dough.
  • Roll out 1 pie crust across the pie plate and fit into pie plate. Cut off excess dough and flute edges for a nice look. (To thin out pie dough, roll out on a lightly floured work surface using a rolling pin.)
  • Pour 2 cans of cherry pie filling into a large mixing bowl. Add in almond extract, ground nutmeg & ground cinnamon. Mix to combine. Pour mixture into pie crust in pie plate.
  • Roll out 2nd pie dough and cut thin strips of equal size. Place 5 strips across pie with space in between. Roll up every other strip off of the pie, and place a strip of dough to the very end. Roll the strips back over the strip.
    Roll up every other strip (not the ones from the first step) then place another strip and roll the strips back over. Keep doing this until pie is covered with a lattice appearance.
  • Cut off any excess strip edgings and seal the strips to the bottom crust.
  • Whisk together 1 egg with 1 tsp water until frothy. Brush egg mixture on top of the lattice and edges of pie. Sprinkle sugar all over the pie lattice.
  • Bake pie on a sheet pan in a 425 degree oven for 45-50 minutes until pie is golden brown.
    NOTE: if pie edges turn golden before pie is done, place a pie ring or a circle of foil around the pie edge to prevent over browning.
  • Cool pie completely before cutting pie. Enjoy.
