Egg Omelette Bowls

- 6 oz Jimmy Dean uncooked regular pork sausage
- 1/2 cup colored bell peppers, diced
- 1/4 cup yellow onion, diced
- 1 (8 count) pkg soft flour tortilla bowls (found in taco aisle of store)
- 1 cup shredded cheddar cheese
- 8 large eggs
- sliced green onions or chives for garnish
Seasonings for eggs
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1/8 tsp paprika
- 1/8 tsp ground cumin
In medium skillet cook up sausage, onions & bell peppers until sausage is browned and onions & peppers are softened. Drain if necessary.NOTE: you can also fry up bacon or chop up ham. Line a large deep sheet pan with parchment paper. Place soft tortilla bowls in a single layer on prepared sheet pan. Evenly spoon cooked sausage into the tortilla bowls.
In a medium bowl whisk together eggs and all seasonings.NOTE: seasonings are a preference, so you can change these up to suit your flavor for omelets. Using a 1/3 cup measuring spoon place egg mixture on top of the cooked sausage in the flour tortilla bowls. If you have extra egg mixture fill in where needed in the bowls.
Sprinkle cheese on top of the egg mixture in the tortilla bowls.
Preheat oven to 350 degrees. Place sheet pan with tortilla bowls into oven and bake for 10 minutes. Place foil over the tortilla bowls and bake another 10-15 minutes until eggs are set.
Remove from oven and garnish with green onions or chives. Enjoy.
