Fried Cabbage with Bacon & Onion

- 1 head green cabbage. cut into bite size pieces
- 1 medium yellow onion, cut into dices
- 6-8 pcs thin bacon, cut into 1 " pieces
- 2 tsp minced garlic
- 2 TBS butter
- 1 TBS stone ground mustard
- 1/4 tsp paprika
- 1 1/2 tsp salt
- 1/2 tsp black pepper
Place bacon pieces into large deep skillet and cook over medium heat until golden brown and crispy. Remove bacon to a plate lined with paper towels.
Add diced onion into skillet with bacon grease. Saute for 2-3 minutes until translucent. Stir in mustard, garlic, paprika, salt & pepper for 1 minute. Stir in butter until melted.
Add cabbage in batches stirring to coat using tongs. Once all cabbage has been added and is coated well with the onion mixture, stir every so often for 12-15 minutes until cabbage has wilted down and is buttery soft.
Crumble & stir in bacon to combine. Enjoy.
