Fruit Cookie Pizza Dessert

A delicious colorful dessert full of different fruits on a cookie crust with a yummy frosting and a glaze topping. Perfect for Spring, Summer, or any Occasion like Mother's Day.

Equipment

  • 16" non-stick pizza pan
  • electric hand mixer with beaters
  • large mixing bowl
  • cutting board & small sharp knife
  • small microwave safe bowl
  • pastry brush

Ingredients

  • 2 (16 oz) each Pillsbury refrigerated pre-made sugar cookie dough
  • (8oz) each blocks cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Toppings are your choice, but below is what I used.

  • 1 lb strawberries, washed & cut in half
  • 1 pint blueberries, washed & left whole
  • 4 kiwis, peeled & sliced
  • 9-10 red grapes, halved
  • 1 jar sliced peaches, pat dry
  • 1/4 jar apple jelly

Instructions

  • Remove cookie dough from packages and slice into rounds. Place rounds all around the 16" non-stick pizza pan and pat out evenly on whole pan.
  • Bake in 350 degree preheated oven for 14-18 minutes until golden and cooked through. Cool cookie down completely on pan before next step.
  • In a large mixing bowl cream up cream cheese using an electric hand mixer with beaters.
  • Beat in powdered sugar and vanilla extract until creamy and combined.
  • Spoon mixture all over cooled cookie and smooth out evenly leaving a 1" border.
  • Place halved or sliced strawberries on the outside edge of the cream cheese. Then place blueberries. Next place kiwi slices, then grapes, and finally peach slices fanned in the middle. Top with a blueberry. See my picture for illustration.
  • Place 1/4 cup of apple jelly in microwave for 40 seconds until melted. Drizzle or spread jelly on all the fruit on cookie.
  • Cut cookie into pizza slices or into squares. Enjoy.
