General Tso's Chicken - Low Carb

You gotta love this copycat Chinese Restaurant recipe for General Tso's with broccoli and a sauce to rave about.

Equipment

Ingredients

General Tso's Sauce

  • 1 cup low sodium chicken broth
  • 1/3 cup low sodium soy sauce
  • 2 TBS low carb sweetener (I use Stevia by Splenda)
  • 1 TBS hoisin sauce
  • 2 TBS sugar free ketchup
  • 2 tsp sesame oil
  • 2 tsp minced garlic

General Tso's Chicken & Broccoil

  • 2 TBS sesame oil
  • 1 lb boneless, skinless chicken breasts cut into bite size pieces (1") You can also use thigh meat, if desired
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 medium head of broccoli cut into bite size florets
  • 1/4 cup green onions, sliced big

Instructions

  • In a medium sauce pan over medium high heat, add all General Tso's sauce ingredients and whisk until it comes to a boil. Lower heat and stir for 5 minutes. Remove from heat and allow to cool slightly while preparing next step.
  • In large skillet heat 2 TBS of sesame oil over medium high heat. Add in chicken and spread out in a single layer. Season top of chicken with salt, black pepper, garlic powder, and onion powder. Let saute for 5 minutes. Turn chicken over and cook an additional 4-5 minutes until chicken is cooked through and no longer pink.
  • Add in broccoli florets with the chicken and cook for 3-4 minutes until desired tenderness is achieved for the broccoli.
  • Add corn starch slurry to sauce and stir to combine. Pour sauce into chicken & broccoli and stir to combine. Allow to simmer for a few minutes until sauce thickens. Add Sliced green onions on top and enjoy.
