Ice Cream French Toast

- 4-6 slices Texas toast bread (or brioche, crouissants, or other hearty bread)
- 4 cups favorite flavor of ice cream
Place 6-8 scoops of ice cream into a microwave safe large bowl and heat on high for 1 minute. Stir ice cream until all melted. Add additional time if needed. Pour melted ice cream into a pie plate. NOTE: 4 cups of melted ice cream works for 6 slices of bread. Heat skillet or griddle to a medium to medium high heat. Spray non-stick cooking spray on skillet or melt butter and spread evenly in skillet/griddle.
Place 1 slice of bread into melted ice cream in pie plate and flip over to coat other side. Place onto hot skillet or griddle. Cook until golden brown on the bottom. Flip over and cook until bottom is golden brown.
Place on a plate and finish remaining slices of bread.Serve up with cooked breakfast meats, fruit, syrup, butter, and/or powdered sugar. Enjoy.
