Add 2 TBS olive oil to bottom of Instant Pot pan. Place diced potatoes, garlic, salt, pepper, parsley and stir well. Place butter pats onto potatoes. Pour chicken broth onto potatoes.
Place rack insert on top of potatoes.
In medium bowl mix well ground beef, milk, panko crumbs, Worcestershire sauce, onion, salt & pepper.
I use a 6 inch spring form pan or you can use a 7 inch pan. Fill with meatloaf mixture, smoothing it out. Place a piece of tinfoil under pan and wrap around sides. Do not cover top of meatloaf with tinfoil.
Pl.ace pan onto rack insert. Lock lid onto instant pot. Make sure valve is turned to sealing.
Set on manual, high pressure, 30 minutes.
Manual release for 10 minutes, then do a quick release.
Pull out meatloaf and spread the meatloaf sauce onto top of meatloaf.
Place into preheated oven set to broil for 5 minutes.
During this time, drain liquid out of instant pot pan leaving potatoes.
Add desired mix ins. I used shredded cheddar cheese, milk, salt, pepper, and butter. Mash up.
Pull meatloaf out of oven, rest for 5 minutes, then slice.
Serve with the mashed potatoes and enjoy.
