Set instant pot to saute setting. Add butter. Once sizzling, add ground sausage and brown up.
Add chicken stock. Place lid on, make sure knob is set to sealing. Set instant pot to high, 5 minutes. Do a quick release. Leave lid on.
Mix flour and milk together, season with salt, pepper, and sage.
Add milk and four mixture to sausage in your instant pot.
Place on saute setting and continue stirring until desired thickness is reached.
