Kielbasa Sausage & Ramen with Asian Sauce

Asian Sauce
- 1/3 cup water
- 1/2 cup low sodium soy sauce
- 3 TBS hoisin sauce
- 1 tsp sesame oil
- 1/2 - 1 tsp saracha sauce (opt)
- 1 TBS corn starch
Meal
- 2 pks ramen noodles (any flavor; not using the flavor packet)
- 1 cup fresh broccoli, chopped
- 1 tsp sesame oil
- 2 large eggs
- salt & pepper, to taste for eggs
- 1 (14oz) package kielbasa sausage or other type sausage link
- 2 cups sliced vegetables (1/2 bell pepper, 4 green onions, 3 sweet peppers, 1/2 yellow onion)
- 1 TBS minced garlic
In a small bowl whisk together asian sauce ingredients (water, soy sauce, hoisin, sesame oil, saracha sauce (opt), and corn starch. Set aside.
In a medium sauce pan bring water to a boil. Add in both packages of ramen noodles & broccoli. Cook per directions on back of ramen package until done. Drain & set aside.NOTE: discard season packets in ramen noodle packages. In a large skillet, add 1 tsp sesame oil & scramble 2 eggs with salt & pepper to taste. Set aside.
Cut sausage into coin or round shapes 1/4 inch thick. Add to same skillet with 1 TBS cooking oil and heat up. Cook sausages until crispy edges and golden on both sides.
Add in vegetables to cooked sausage & cook until softened. Add in garlic and cook 1 additional minute.
Add in drained noodles & broccoli, scrambled eggs, and asian sauce. Mix well together until well combined. Simmer for a few minutes until sauce is thickened.
Serve up.
