Mini Tortilla Cinnamon Rolls

Taking all the hard work out of making cinnamon rolls by using tortillas. Same great flavor.

Equipment

  • small pan or ramekin for oven
  • butter knife
  • steak knife
  • small bowl
  • measuring spoons

Ingredients

This recipe allows you to make as many tortilla cinnamon rolls as you need. This recipe makes an 8 x 8 pan of the rolls.

  • 4-5 large burrito size flour tortillas
  • 4 TBS softened butter, DIVIDED
  • ground cinnamon
  • brown sugar
  • 2 TBS melted butter
  • 4 TBS powdered sugar
  • 2-3 TBS milk
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees. Spray an 8 x 8 round or square pan with non-stick cooking spray or lightly butter the pan.
  • Lay out a large burrito size flour tortilla on a clean work surface.
  • Spread 1 TBS softened butter on tortilla to give full coverage. Sprinkle ground cinnamon over the softened butter on tortilla. Sprinkle with brown sugar to cover.
  • Roll up tortilla tightly. Cut into 1 inch pieces. Place into prepared pan to fit firmly side by side.
  • Drizzle melted butter over the tops of tortilla rolls. Sprinkle with additional cinnamon and brown sugar to your liking.
  • Bake in preheated oven for 20 minutes.
  • In a small bowl whisk together powdered sugar, vanilla, and milk until a smooth drizzle forms. Pour over tortilla cinnamon rolls warm or cool. Enjoy.
