My B.E.S.T. Breakfast Toasted Sandwich
Bacon, Egg, Spinach, Tomato, all between toasted bread. Perfect Weekend Breakfast, Brunch, or even Dinner.

This recipe makes 2 sandwiches (1/2 recipe for 1 sandwich)
- 6 pcs bacon
- 4 large eggs
- 1 TBS butter
- salt & pepper to taste (for eggs)
- 1 handful fresh cleaned baby spinach
- 1 medium red tomato, sliced
- 4 pcs bread
- 2 TBS mayonnaise
- 1/4 cup shredded cheddar cheese or other favorite cheese
In a skillet over medium heat cook bacon until golden brown and crisp. Remove cooked bacon to a paper tower lined plate and set aside.NOTE: you may also cook bacon in oven or in air fryer. Crack 4 eggs into small bowl. Heat a skillet over medium heat with 1 TBS butter until melted. Add in eggs. Season with salt & black pepper to taste. Cook until set on bottom. Flip over eggs and cook to your liking either over easy or over hard. Sprinkle or grate cheese on top of eggs. NOTE: you may also cook eggs scrambled. Toast bread and spread one side of each toast with mayonnaise.
Place a handful of spinach on top of mayonnaise'd side of 1 toast. Place a layer of tomatoes on spinach. Place eggs on top of tomatoes. Place 2 pieces of crisp bacon on top of eggs. Place another piece of toast on top of bacon. Slice in half and enjoyl
