Pineapple Coleslaw
Cool refreshing coleslaw using pineapple and a delicious dressing with Hawaiian flavor.

- 3 cups thinly shredded cabbage (green and/or purple)
- 1 large carrot, grated thin
- 3 green onions, thinly sliced
- 1 (20oz) can pineapple chunks, drained well (reserve juice for dressing)
Creamy Dressing
- 1/3 cup mayonnaise
- 1/4 cup sour cream
- 3 TBS apple cider vinegar
- 3 TBS brown sugar
- 3 TBS reserved pineapple juice
- 1 tsp salt
- 1/2 tsp black pepper
In a large mixing bowl mix together shredded cabbage, shredded carrot, sliced green onions, and drained pineapple.
In a small bowl whisk together mayonnaise, sour cream, apple cider vinegar, brown sugar, pineapple juice, salt & pepper.
Pour dressing into cabbage mixture and mix together. Chill in refrigerator covered until ready to serve.
