Pineapple Glazed Ham Slices

Equipment

Ingredients

  • 1 (2-3 lb) boneless fully cooked ham (pre-sliced or not) slices should be 1/4 - 1/2 inch thick
  • 1 (20 oz) can pineapple slices with juice
  • 1 jar maraschino cherries
  • 1 cup cocoa-cola
  • 1/4 cup brown sugar
  • 2 TBS Dijon mustard
  • pineapple juice from can above (about 3/4 cup)
  • fresh whole cloves

Instructions

  • Preheat oven to 400 degrees.
  • In a deep 9 x 13 baking dish arrange 10 ham slices in 2 rows slightly over lapping.
    NOTE: if ham slices are thin, place 2 pieces together to form a thick slice.
    NOTE: if your ham is not pre-sliced, you can slice thick 1/4-1/2 inch slices.
  • Place a pineapple ring on top of each ham slice. Place a cherry inside of the pineapple ring. Place cloves on ham slices for extra flavor.
  • In a large measuring cup (4 cup or larger) whisk together cocoa-cola, pineapple juice, brown sugar, and mustard.
  • Pour mixture all over the ham in baking dish. This will help keep ham from drying out in the oven and add flavor to each ham slice.
  • Bake in preheated oven for 40 minutes. Halfway through cooking time spoon glaze from baking dish onto the ham.
  • Remove baking dish from oven and pour liquid into a measuring cup. Make a slurry of 1 1/2 TBS corn starch mixed with 1/4 cup water. Pour into liquid in measuring cup and mix together to help thicken glaze. Pour over ham and let sit for a few minutes. Enjoy.
