Red, White, & Blue Banana Pudding Salad

- 2 (8oz boxes) cream cheese, softened
- 1 (3.4oz box) instant banana cream pudding dry mix
- 1 cup refrigerated liquid French Vanilla Creamer
- 16 oz fresh strawberries, remove stems & cut into quarters
- 12 oz fresh blueberries
- 4 medium bananas, sliced
- 1/4 cup lemon juice
In a large mixing bowl beat softened cream cheese until smooth using an electric hand mixer.NOTE: to soften cream cheese, place in a microwave safe bowl and microwave for 10 seconds. NOTE: cream cheese may clump in beaters, but just keep mixing, it will smooth out. Empty package of pudding mix into cream cheese and beat until combined.
Slowly add a little bit of creamer to mix and beat to combine. Keep adding in a little of cream and continue to mix until all of the creamer has been mixed in.NOTE: you can substitute 1 cup heavy whipping cream & 1 tsp of vanilla extract for the French Vanilla Creamer. Refrigerate mixture until done with next steps.
In another large mixing bowl place sliced bananas and lemon juice. Stir to coat evenly. Pour out excess lemon juice. Add in prepared strawberries and blueberries. Mix to combine.
Remove cream cheese mixture from refrigerator and pour over fruit. Fold together until combined.
Serve immediately, or cover & refrigerate until ready to serve.
