Ingredients
1(12 pack)King's Hawaiian Rolls or other Mini Dinner Rolls
2cupscooked shredded chicken (I use rotisserie chickens)
2cupsfavorite barbecue sauce (DIVIDED)
1/4red onionsliced into small slivers
16ozcheddar cheese, shredded (or other favorite cheese (DIVIDED)
1/4cupbutter, melted
garlic powder or other seasoning
Instructions
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish or sheet pan with non-stick cooking spray. You can also just line with parchment paper for ease.
Lay out Hawaiian rolls on a cutting board. Keeping rolls all together without splitting them apart slice rolls in half lengthwise using a sharp serrated knife. Remove the tops to a separate dish for later in the recipe.
Place the bottom layer of rolls into prepared baking dish. Place 1/2 of the shredded cheese on top of the bottom layer in baking dish and spread evenly to cover.
In a mixing bowl mix together cooked shredded chicken with 1 1/2 cups bbq sauce. Use a large scoop to place chicken mixture all over the cheese that's on the bottom layer of rolls. Then spread carefully over cheese.
Drizzle rest of bbq sauce (1/2 cup) over the bbq chicken layer.
Sprinkle the slivered red onions across the bbq sauce layer and Top with remaining shredded cheese.
Place the tops of the rolls on top of the cheese. Using a pastry brush, slather the melted butter all along the tops of the rolls. Sprinkle garlic powder or other seasoning that you prefer on the melted butter.
Cover baking dish with foil loosely. Bake in preheated oven for 12 minutes then remove foil and bake an additional 5-10 minutes until cheese has melted.
Let rest for a few minutes then cut apart using sharp knife or kitchen scissors. Enjoy.
