Savory Roasted Sweet Potatoes

large sheet pan lined with parchment

- 2.5-3 lbs fresh sweet potatoes or yams
- 4 TBS butter, melted
- 3 tsp minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried sage
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 2 tsp dried parsley
- 1 cup freshly grated parmesan cheese
Melt butter in a small microwave bowl. Whisk in minced garlic, salt, pepper, sage, thyme, rosemary, and parsley.
Peel & cut sweet potatoes into 1/2 inch rounds. Place the sweet potato rounds into a large mixing bowl.
Pour melted butter mixture over the sweet potatoes in the large mixing bowl and coat potatoes well with mixture.
Pour grated parmesan cheese onto parchment lined sheet pan and spread out evenly.
Place sweet potato rounds flat onto the parmesan cheese.
Bake in 400 degree preheated oven for 25-30 minutes until potatoes are soft and tender.
Remove from oven and separate potatoes and serve on a serving platter.
