Savory Roasted Sweet Potatoes

Equipment

  • vegetable peeler or paring knife
  • cutting board & large sharp knife
  • large mixing bowl
  • measuring spoons
  • small microwave safe bowl
  • large sheet pan lined with parchment
  • measuring cup
  • cheese grater

Ingredients

  • 2.5-3 lbs fresh sweet potatoes or yams
  • 4 TBS butter, melted
  • 3 tsp minced garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried sage
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 2 tsp dried parsley
  • 1 cup freshly grated parmesan cheese

Instructions

  • Melt butter in a small microwave bowl. Whisk in minced garlic, salt, pepper, sage, thyme, rosemary, and parsley.
  • Peel & cut sweet potatoes into 1/2 inch rounds. Place the sweet potato rounds into a large mixing bowl.
  • Pour melted butter mixture over the sweet potatoes in the large mixing bowl and coat potatoes well with mixture.
  • Pour grated parmesan cheese onto parchment lined sheet pan and spread out evenly.
  • Place sweet potato rounds flat onto the parmesan cheese.
  • Bake in 400 degree preheated oven for 25-30 minutes until potatoes are soft and tender.
  • Remove from oven and separate potatoes and serve on a serving platter.
