Smoked Sausage & Creamy Pesto Pasta
One Pot Easy Weeknight Meal

- 2 TBS cooking oil
- 1 TBS butter
- 1 lb smoked sausage or Kiel Basa cut into 1/4 inch rounds
- 1 medium yellow onion, diced
- 2 tsp minced garlic
- 1/4 tsp black pepper
- 3 cups chicken broth
- 1 (12oz) pkg uncooked egg noodles
- 1/2 cup parmesan cheese
- 1 cup basil pesto (or other favorite flavor or brand)
- 1 cup heavy whipping cream
In large pot or Dutch Oven over medium high heat add oil & butter. Heat until butter is melted. Add in diced onion and sliced sausage. Cook until onion is softened and sausage is browned on both sides.
Stir in garlic and black pepper and cook an additional minute.
Add in chicken broth and bring to a boil over high heat. Add in noodles. Stir to combine noodles, sausage and broth. (NOTE: noodles do not need to be completely submerged in liquid.)
Place lid on pot, lower heat to a medium high or medium for 10 -12 minutes until pasta is cooked through and tender. (NOTE: please remove lid every few minutes and stir pasta so it doesn't stick to bottom of pot.) (IF YOU NEED TO ADD ANY ADDITIONAL BROTH, DO SO AT THIS TIME.)
Remove lid once pasta is completely cooked. Stir in parmesan cheese, pesto, and heavy cream to combine. Turn off burner and let sit for a few minutes to thicken if needed. Enjoy.
