Spring Fruit Pudding Salad

Equipment

  • large mixing bowl
  • spatula

Ingredients

  • 1 (3.4 oz) box vanilla instant pudding mix
  • 2 (8 oz) cans crushed pineapple, drained
  • 1 (8 oz) tub cool whip, thawed
  • 1 (10 oz) bag colored mini marshmallows DIVIDED
  • 1/2 cup chopped walnuts
  • * optional ingredients: shredded carrots, shredded coconuts or other types of nuts

Instructions

  • Place thawed cool whip into a large mixing bowl.
  • Empty package of instant vanilla pudding on top of the cool whip in large mixing bowl and combine using a spatula until well blended.
  • In a small bowl drain out 2 cans of crushed pineapple. Place the drained pineapple into bowl that has the cool whip pudding mixture in it. Mix well with a fork to combine.
  • Stir in 8 oz of mini marshmallows carefully. Save remaining 2 oz of marshmallows for topping.
  • Mix in chopped walnuts and/or other optional ingredients like shredded carrots, shredded coconut or other types of nuts.
  • Place in a serving bowl and refrigerate to chill until ready to enjoy.
