Strawberry Eclair No Bake Cake

Only 6 Ingredients to make this cool refreshing no bake cake perfect for picnics, potlucks or just have in your fridge.

Ingredients

  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1 (8 oz) tub frozen cool whip, thawed
  • 1 (14 oz) box graham crackers
  • 1 lb fresh strawberries, washed and sliced
  • 1 (16 oz) tub strawberry frosting

Instructions

  • In a large mixing bowl whisk together pudding mix and milk until thickened. Using a spatula fold in the thawed cool whip until well blended.
  • In a 9 x 13 baking dish line bottom with a single layer of the graham crackers.
    NOTE: the layer will soften during chill time later in recipe.
  • Pour 1/2 of the pudding mixture over the graham cracker layer and smooth out evenly.
  • Layer 1/2 of the sliced strawberries on top of the pudding mixture evenly.
  • Repeat with another layer of graham crackers. Spread rest of pudding mixture on top of graham crackers. Top with final layer of sliced strawberries. Finish with a final layer of graham crackers.
  • Remove top and metal piece inside of tub of frosting. Place in microwave for 15-20 seconds. Stir. Pour frosting over the top layer of graham crackers in baking dish and smooth evenly.
    NOTE: work with the frosting on cake fast as it will set up quickly.
  • Cover dish and refrigerate for at least 4 hours to overnight.
