Taco Cabbage and Ground Beef Skillet

A hearty quick healthy low carb recipe to up the game on your taco night.

Equipment

  • cutting board & sharp knife
  • large skillet with lid
  • spatula
  • measuring spoons
  • cheese grater

Ingredients

  • 1 lb ground beef
  • 1/2 medium yellow onion, diced (use also white or a purple onion)
  • 2 tsp garlic, minced
  • 1 head green cabbage, chopped into bite size pieces
  • 1 (14 oz) can petite diced tomatoes with juice
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1 cup shredded cheddar cheese
  • (OPTIONAL TOPPINGS) cilantro, sour cream, pico, olives

Instructions

  • In a large skillet break up and brown 1 lb ground beef over medium high heat until no longer pink. Drain excess grease.
  • Add in diced onion and cook for 2-3 minutes until softened. Stir in minced garlic for 1 minute.
  • Add in seasonings (chili powder, cumin, paprika, black pepper, & salt). Stir until meat is completely coated with the seasonings.
    NOTE: instead of adding the separate seasonings, you can use 1/2 - 1 packet of store bought taco seasoning or 2 TBS of homemade taco seasoning.
  • Start adding in the cabbage and the canned diced tomatoes until all cabbage has been added. Stir to combine everything together.
  • Place a lid onto the skillet and cook for 10 minutes while stirring every so often until cabbage is softened to your liking.
  • Turn off burner & remove lid. Top with shredded cheese and cilantro. Place lid back on and allow cheese to melt for a few minutes.
  • Serve up with your favorite taco toppings if desired.
