In a large skillet break up and brown 1 lb ground beef over medium high heat until no longer pink. Drain excess grease.
Add in diced onion and cook for 2-3 minutes until softened. Stir in minced garlic for 1 minute.
Add in seasonings (chili powder, cumin, paprika, black pepper, & salt). Stir until meat is completely coated with the seasonings.NOTE: instead of adding the separate seasonings, you can use 1/2 - 1 packet of store bought taco seasoning or 2 TBS of homemade taco seasoning.
Start adding in the cabbage and the canned diced tomatoes until all cabbage has been added. Stir to combine everything together.
Place a lid onto the skillet and cook for 10 minutes while stirring every so often until cabbage is softened to your liking.
Turn off burner & remove lid. Top with shredded cheese and cilantro. Place lid back on and allow cheese to melt for a few minutes.
Serve up with your favorite taco toppings if desired.
