Taco Soup

- 1 LB Ground Beef
- 1 Onion Diced
- 1 can rotel tomatoes
- 1 packet Ranch dressing mix
- 1 packet taco seasoning or 3 TBS homemade seasoning
- 2 cups frozen or canned corn
- 4 cups Beef Broth
- 1 cup Water
- Sour Cream
- Shredded Cheese
- Cilantro
- pico
- bked tortilla strips
Heat a drizzle of olive oil in a large pot. Add onions and sautee for 2 minutes.
Add ground beef and brown.
Into ground beef add can rotel tomatoes, packet ranch dressing mix, taco seasoning, corn, beef broth, and water. Mix well.
Bring to a rapid boil. Turn down to low and let simmer for 20 minutes.
Prepare toppings.
Serve and Enjoy!
