- 2 lbs ground beef
- 1 medium yellow onion, diced (DIVIDED)
- 1/4 cup mayonnaise
- 8 oz thousand island dressing (DIVIDED)
- 1 cup dill pickle, diced
- 2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 8 oz sharp cheddar cheese, shredded (or triple blend which I use)
- 32 oz bag frozen tater tots
- 1/2 head iceberg lettuce, shredded
Preheat oven to 400 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
In a large skillet over medium high heat brown ground beef and cook onion until softened. Turn off heat. Drain excess grease.
To ground beef add mayo, 4 oz thousand island dressing, garlic powder, salt, pepper, and diced pickle. Stir well to combine.
Pour mixture into prepared baking dish. Sprinkle cheese over meat mixture evenly. Lay tater tots in a single layer to cover casserole.
Place casserole in preheated oven for 40-45 minutes until tots are crisp and golden brown and cheese is melted.
ToP with shredded lettuce, 1/4 diced onion, and remainder 4 oz thousand island dressing. Enjoy.
