2packetstaco seasoning or 6 TBS homemade taco seasoning
salt, to taste
black pepper, to taste
1(14oz) canwhole kernel corn with liquid
1(14oz) candiced tomatoes with juice
1(4oz) can diced green chilis mild
1/4cupfavorite red salsa
3/4cupsour cream
1(9oz) bagFritos original corn chips (DIVIDED)
2cupsmexican shredded cheese (DIVIDED)
3green onions, sliced
Instructions
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
In a large skillet over medium high heat, break up and brown ground beef. Add onion in to soften. Drain excess grease. Stir in taco seasoning and season with salt & pepper to taste.
Mix in corn, diced tomatoes, green chilis, salsa, and sour cream. Turn off heat.
Pour 1/2 of the meat mixture into the prepared baking dish evenly. Spread 1/2 of a bag of Fritos corn chips. Top evenly with 1/2 of the shredded cheese.
Repeat with remainder of meat mixture, then Fritos corn chips and top with shredded cheese.
Bake in preheated oven for 15-20 minutes until cheese has melted. Garnish with sliced green onions. Enjoy.
