The Easiest Enchilada Burrito Casserole

Make it so easy with frozen burritos. The enchilada sauce makes them fluff up and become little pillows of softness. With any casserole don't forget the cheese and load it up with your favorite Mexican toppings like pico, sour cream, cilantro, diced green chilies.......

Equipment

  • 9 x 13 baking dish
  • non-stick cooking spray

Ingredients

  • 1 (8 ct) pkg frozen burritos (bean & cheese, Beef & bean or other variety)
  • 2 (10 oz) cans red or green enchilada sauce (hot, mild, or medium)
  • 20 oz shredded Mexican or Monterey Jack cheese (DIVIDED)
  • 1 (10 oz) container fresh Pico de Gallo (hot, medium, or mild)
  • 1 (4 oz) can diced green chilies, drained
  • toppings (sour cream and cilantro)

Instructions

  • Preheat oven to 350 degrees. Spray a 9" x 13" baking dish with non-stick cooking spray.
  • Pour one (10oz) can of enchilada sauce in bottom of baking dish and spread evenly. Place frozen burritos in a single layer on top of the sauce in baking dish.
  • Pour another (10oz) can of enchilada sauce over the tops of the frozen burritos. Sprinkle 16oz of shredded cheese over the frozen burritos.
  • Layer with green chilies, Pico de Gallo, and top with remaining 4oz of shredded cheese.
  • Place in preheated oven for 30 minutes until cheese has melted and burritos and cooked through. Serve with sour cream & cilantro, if desired.
