Preheat oven to 350 degrees. Lightly spray a 9x9 baking pan with cooking spray.
In a large bowl, mash up 3-4 bananas (depending on size. if you have large bananas 3 will work.)
Add 3 eggs, oil, white sugar, and vanilla to bananas and mix well.
Add 2 cups of flour, stirring after each cup of flour to incorporate well. Set aside.
In a medium pot, melt 1/2 cup butter over medium high heat. Add brown sugar and mix together continually until the mixture is boiling rapidly. Turn off heat.
Pour butter/brown sugar mixture into prepared baking pan to cover entire bottom of pan.
Slice 2 bananas and layer on the bottom of pan. Should have one layer.
Puor banana bread mixture that you made earlier over the bananas and spread evenly.
Place in preheated oven for 40-50 minutes until golden brown and you can insert a toothpick in and come out clean.
Allow to cool for just a few minutes. (Not too long).
Place a plate over the banana bread and turn over. Cake should release from pan onto plate. (Give it a shake or pat the bottom of pan to help release if needed.)
Enjoy with some cool whip or ice cream.
