Vanilla Sauce Bread Pudding

Dried Bread Soaked in a Custard Base Topped with a Warm Vanilla Sauce.

Equipment

Ingredients

  • 5-6 cups cubed bread (french bread, brioche, or other)
  • 1 TBS butter

Custard Base

  • 2 cups milk
  • 1/4 cup butter
  • 2 large eggs, beaten
  • 1/2 cup white granulated sugar
  • 1 TBS vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Vanilla Sauce

  • 1/2 cup butter, cut into cubes
  • 1/2 cup white granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup heavy whipping cream
  • 1 TBS vanilla extract

Instructions

Let's Dry Out The Bread

  • Line a large deep sheet pan with parchment paper. Preheat oven to 250 degrees.
  • Cut the bread into 1" cube shapes. Place bread cubes onto lined sheet pan. Place in oven for 30-40 minutes until dried out.
  • Butter a 9 x 13 baking dish. Place dried cubed bread into prepared baking dish and set aside.

Make Custard Base

  • Preheat oven to 350 degrees.
  • In a medium sauce pan place 2 cups milk and 1/4 cup butter. Stir over medium heat for 4-5 minutes until it starts to simmer. Turn off heat and pour milk mixture all over the bread cubes in baking dish. Press cubes into milk to soften for a few minutes.
  • In a medium bowl whisk together 1/2 cup white granulated sugar, 2 beaten eggs, 1 TBS vanilla extract, 1/2 tsp cinnamon, and 1/2 tsp ground nutmeg.
  • Pour mixture over the milk soaked bread in baking dish. Stir everything together.
  • Bake in 350 degree preheated oven for 45-60 minutes until center is set, edges are golden and a toothpick inserted in comes out mostly clean. Let rest on countertop while making the vanilla sauce.

Vanilla Sauce

  • In a medium sauce pan place 1 cup cubed butter, 1/2 cup white granulated sugar, 1/2 cup packed brown sugar and 1/2 cup heavy whipping cream. Bring to a boil over medium heat while stirring until it thickens slightly 5-8 minutes.
  • Turn off heat and stir in 1 TBS vanilla extract. Pour warm vanilla sauce over bread pudding in baking dish. Serve immediately and enjoy.
