Alice Springs Chicken Recipe

A delicious copycat recipe that's found in steakhouses. Baked chicken with a yummy sauce, cheese, bacon, and onion.

Equipment

Ingredients

  • 1 1/2 lbs chicken tenderloins
  • 8 pcs bacon, cooked until crispy
  • 1/2 cup shredded cheddar cheese
  • 1 medium yellow onion, diced
  • 3 TBS butter, DIVIDED
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • fresh parsley, garnish

Sauce/Marinade for Chicken

  • 1/4 cup mayonnaise
  • 1/2 cup honey
  • 1/2 cup dijon stone ground mustard

Instructions

To cook bacon

  • Preheat oven to 425 degrees. Place uncooked bacon on a lined baking sheet pan. (Make sure it has a lip going along the outside to prevent grease from dripping into oven.) Bake for 15-18 minutes until golden brown and crispy.
    Remove from oven and place bacon on paper towel lined plate to drain. Set aside.

Sauce/Marinade for Chicken

  • While the bacon is cooking in oven, make the sauce/marinade. In a medium bowl whisk together mayonnaise, honey, and mustard.
  • Place chicken on a plate and sprinkle both sides with salt & pepper. Spread 1/2 of the sauce/marinade onto both sides of chicken and allow to sit while browning onion.
    NOTE: make sure to leave half of the sauce/marinade for further in the recipe.

Finishing Dish

  • In a large skillet, heat 1 TBS butter. Add in diced onion, sprinkle with salt and saute for 3-4 minutes until softened and lightly browned. Remove from skillet into a small bowl and set aside.
  • In same skillet add additional 2 TBS butter and allow to get hot. Place marinated chicken tender into hot skillet and allow to brown for 3-4 minutes on one side. Flip chicken over and cook another 3-4 minutes until browned.
  • Preheat oven to 400 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Place browned chicken tenders into prepared baking dish. Pour rest of sauce over the chicken.
  • Top sauced chicken with onions. Place one piece of crisp bacon on top of onion. Place 2 TBS shredded cheddar cheese on top of onion.
  • Place in preheated oven for 15-18 minutes until chicken is cooked through and tender. Garnish with parsley and enjoy.
