Peach Cake with a Pineapple Surprise

Equipment

  • 2 large mixing bowls

  • 9 x 13 baking dish
  • electric hand mixer
  • measuring cup
  • spatula

Ingredients

  • 1 (15.25oz) box white cake mix
  • 1 (21oz) can peach pie filling
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 (8oz) block cream cheese, softened
  • 1 (3.4oz) box vanilla instant pudding dry mix
  • 1 (16oz) can crushed pineapple with juice
  • 1 (8oz) tub cool whip, thawed

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray and set aside.
  • In a large mixing bowl mix together cake mix, eggs, pie filling, and sour cream until combined. Place cake batter into prepared baking dish and spread evenly. Bake in preheated oven for 30-35 minutes until cake is golden brown and done.
    Allow cake to cool in baking dish before next step.
  • After cake has cooled in the baking dish, let's make the frosting.
  • In a large mixing bowl beat cream cheese for 1 minute using an electric hand mixer. Add in crushed pineapple with the juice and the dry pudding mix. Using electric mixer beat until well combined.
  • Using a spatula fold in thawed cool whip until combined. Spread frosting onto cooled cake in baking dish. Refrigerate for 1 hour to set up the frosting.
    Refrigerate leftover cake. Enjoy.
