Apple Pie Bread

A delicious easy recipe using box cake mix, canned pie filling. Change the flavors many ways.

Equipment

  • 1 large mixing bowl
  • 2 standard size loaf pans
  • 1 small mixing bowl

Ingredients

  • 1 (15.25 oz) box yellow cake mix
  • 1 cup self rising flour (or 1 cup all-purpose flour + 2 tsp baking powder)
  • 1 TBS ground cinnamon
  • 4 large eggs, slightly beaten
  • 1 (21 oz) can apple pie filling, chopped
  • 1 medium apple, peeled & diced

Instructions

  • Preheat oven to 325 degrees. Spray 2 standard loaf pans with non-stick cooking spray. (I like to use spray with flour in it.)
  • In a large bowl whisk together cake mix, flour, and cinnamon. Stir in beaten eggs, canned pie filling and diced apple.
  • Divide mixture between the two prepared loaf pan. Bake in preheated oven for 30-40 minutes until golden brown. Toothpick should come out clean from center of bread. Top of bread should be firm.
  • Let cool, slice & enjoy.

    Just made this as written this morning and it is a great recipe to have in your file. I don’t think anyone would know it is a cake mix recipe especially with the addition of the chopped apples to the apple pie filling, The fact it makes 2 loaves with such a small investment of time really makes this recipe a keeper. The second loaf could be cut in slices and frozen for an afternoon coffee break, or the whole loaf to gift or I’m personally thinking trying it in small loaf tins for Christmas gifts. The slices taste yummy toasted a bit with some butter. I will try it as well with a crumb topping (my family suggestion) but it doesn’t need it. It did take about 45 minutes to cook in my oven in glass pyrex pans. Thanks Catherine!
