Avocado Chicken Salad

No cooking involved.  I used a fully cooked rotisserie chicken and fresh ingredients finishing it off with a delicious dressing.  So simple and easy.  It spells summertime.  So refresh your chicken salad.

Avocado Chicken Salad

Ingredients

  • 2 chicken breasts fully cooked and shredded
  • 2 ripe avocados diced
  • 1 cup corn frozen, fresh, or canned
  • 1 sm red onion diced
  • 1/4 cup cilantro chopped well (substitute with pasley or dill)
  • 2 TBS lime juice
  • 2 TBS olive oil
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup green onions sliced thinly

Instructions

  • In a large bowl, place chicken, avocado, red onion, green onions, corn, and cilantro. Mix well.
  • In small bowl whisk together lime, olive oil, salt, pepper, mayonnaise, and sour cream.
  • Pour dressing over chicken mixture and carefully toss well.
  • Serve and Enjoy.
