No cooking involved. I used a fully cooked rotisserie chicken and fresh ingredients finishing it off with a delicious dressing. So simple and easy. It spells summertime. So refresh your chicken salad.
Avocado Chicken Salad
Ingredients
- 2 chicken breasts fully cooked and shredded
- 2 ripe avocados diced
- 1 cup corn frozen, fresh, or canned
- 1 sm red onion diced
- 1/4 cup cilantro chopped well (substitute with pasley or dill)
- 2 TBS lime juice
- 2 TBS olive oil
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup green onions sliced thinly
Instructions
- In a large bowl, place chicken, avocado, red onion, green onions, corn, and cilantro. Mix well.
- In small bowl whisk together lime, olive oil, salt, pepper, mayonnaise, and sour cream.
- Pour dressing over chicken mixture and carefully toss well.
- Serve and Enjoy.
