Baked Brushetta Chicken-Easy Meal Idea

Ingredients

  • 1 1/2 lbs chicken breasts, boneless & skinless
  • 2 (6 oz) boxes stove top stuffing, chicken flavor
  • 1 (14 oz) can diced tomatoes
  • 1 (10 oz) can chicken broth
  • 2 tsp garlic minced
  • 2 tsp Italian seasoning, divided
  • 1/2 tsp salt, divided
  • 1/2 tsp pepper, divided
  • 2 cups shredded mozzarella cheese

Instructions

  • Preheat oven to 400 degrees. Spray a deep casserole dish with non-stick cooking spray.
  • Cut chicken into bite size pieces and place into casserole dish. Season with 1/4 tsp salt, tsp pepper, and 1 tsp Italian seasoning.
  • Sprinkle all the cheese evenly over chicken.
  • In a large bowl empty both boxes of stuffing mix. Add in tomatoes with juice, rotel tomatoes and juice, chicken broth, minced garlic, 1/4 tsp salt, 1/4 tsp pepper, and 2 tsp Italian seasonings. Mix well to combine.
  • Evenly place stuffing mixture over the cheese in casserole dish and flatten down.
  • Bake in preheated oven for 30 minutes until chicken is cooked through.
