Preheat oven to 400 degrees. Spray a deep casserole dish with non-stick cooking spray.
Cut chicken into bite size pieces and place into casserole dish. Season with 1/4 tsp salt, tsp pepper, and 1 tsp Italian seasoning.
Sprinkle all the cheese evenly over chicken.
In a large bowl empty both boxes of stuffing mix. Add in tomatoes with juice, rotel tomatoes and juice, chicken broth, minced garlic, 1/4 tsp salt, 1/4 tsp pepper, and 2 tsp Italian seasonings. Mix well to combine.
Evenly place stuffing mixture over the cheese in casserole dish and flatten down.
Bake in preheated oven for 30 minutes until chicken is cooked through.
