Pineapple Cheese Ball - A Great Holiday Appetizer

Ingredients

  • 2 (8 oz) pks cream cheese, room temperature
  • 1 1/2 cups crushed pineapple, drained
  • 2 green onions sliced thinly
  • 1/2 green bell pepper, diced fine (choose different colors)
  • 1/3 jar roasted red pepper, diced fine
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 cups pecans, chopped fine, divided

Instructions

  • In a large bowl combine together cream cheese, pineapple, green onions, bell pepper, roasted red bell pepper, salt, pepper, and 1/2 cup chopped pecans.
  • Place 2 sheets of plastic wrap on work surface to make 1 large plastic sheet. Place mixture into center of plastic wrap and using the plastic to help form the mixture into a ball shape. Keep mixture in the plastic wrap by gathering the ends of the plastic and twisting it to get the tight all shape. Place into a small bowl to help keep shape while placing in refrigerator to set up.
  • After 2 hours, remove cheese ball from refrigerator. Place the remaining chopped pecans on a clean work surface or onto parchment paper. Remove plastic from cheese ball. Place cheese ball in center of chopped pecans and roll until completely covered. Place on a serving plate with crackers.
