Preheat oven to 350 degrees.
In a large skillet, heat oil on a medium high heat. Add onions and cook until tender.
Add ground beef and cook until un longer pink. Drain excess fat.
Add taco seasoning and refried beans and mix to combine and heated through. Turn off heat.
In a small bowl mix sour cream and cream of mushroom soup.
Spread half of the sour cream/cream of mushroom mixture in to the bottom of a 9 x 13 baking dish.
Cover with 1 layer of tortillas. You may need to cut some to fill in spaces.
Spread 1/2 of the ground beef mixture on top of tortillas.
Top with 1 cup of shredded cheese evenly.
Add another layer of tortillas. Spread rest of sour cream and cream of mushroom soup over tortillas evenly.
Add rest of ground beef mixture and evenly spread.
Top with remainder of cheese.
Bake for 20 minutes until cheese is golden and melted. Mixture should be heated through. Top with cilantro as a garnish, if you would like. Enjoy.
