Crockpot Tender Roast with Delicious Gravy

Ingredients

  • 2 TBS cooking oil
  • salt & pepper to taste
  • 1 3lb chuck roast
  • 1-2 onions, chopped
  • 2 cups carrots, chopped
  • 1 lb baby red potatoes, cut in half any potato will work
  • 2 cups beef broth
  • 2-3 tsp Worchesire Sauce
  • 1 1/2 tsp parsley, dried
  • 1 1/2 tsp rosemary, dried
  • 1 1/2 tsp thyme, dried
  • 3 TBS corn starch
  • 1 TBS garlic minced
  • fresh parsley, garnish (optional)

Instructions

  • Optional Step: Salt & pepper all sides of roast. Heat oil in a large skillet or pot. Place roast in skillet and sear on each side for 3-4 minutes. (This gives it a nice flavor and color) Place roast in crockpot.
  • Place vegetables in pot and cook for 4-5 minutes. Add 1 TBS of garlic and season with salt & pepper. Stir for 30 seconds. Add vegetables to crockpot over the roast and along the sides.
  • In a medium bowl, add beef broth, worchesire sauce and seasonings, mix to combine. Pour over roast and vegetables.
  • Place lid on and cook for 8-9 hours on low, or 5-6 hours on high until roast and vegetables are fork tender.
  • Pull roast & vegetables out and place on serving platter.
  • In a small bowl place about 1/4 cup of liquid from crockpot along with corn starch and mix well. Pour into the juices of the crockpot and stir until gravy thickness. Add more cornstarch if needed. Pour gravy over roast. Top with fresh parsley (optional). Enjoy.
