Breakfast in a Crockpot (Croissant Style)

I love, love, love, putting ingredients into a crockpot and hours later having a meal. No exception here.  We love breakfast for dinner.  So I put my breakfast ingredients into my crockpot in the morning and have it ready by late afternoon.  Yep.  Use this for a brunch or a breakfast also, by preparing in the evening and letting it do its thing all night.

Breakfast in a Crockpot (Croissant Style)

Ingredients

  • 1 lb Precooked Sausage Patties diced
  • 6 croissants broken into pieces
  • 1 cup diced peppers any color (I used mixed)
  • 1/2 cup green onions sliced thinly
  • 8 eggs
  • Salt & Pepper to taste
  • 1/4 tsp ground cumin
  • 1/2 tsp paprika
  • 2 1/2 cups Cheddar Cheese Shredded
  • 3/4 cup cold milk
  • cooking spray

Instructions

  • Spray the inside of crockpot with cooking spray.
  • In a large bowl, place all croissant pieces, diced cooked sausage, onions, peppers, and cheese. Toss well.
  • Place mixture into crockpot.
  • In same bowl, whisk 8 eggs, milk, salt, pepper, cumin, and paprika together.
  • Pour of croissant mixture in crockpot.
  • Cook with lid on for 6-8 hours, checking after 6 hours to make sure eggs are set and thoroughly cooked.
  • Serve and enjoy.
