

Breakfast Smashed Tacos
Crispy tortilla with seasoned sausage, eggs your way, and toppings to delight.
Equipment
- 2 small bowls and fork
- clean work surface
- large skillet, griddle, or black stone grill
Ingredients
This recipe makes 2 Breakfast Smashed Tacos. Feel free to make as many as you need.
- 2 standard fajita size flour tortillas
- 1/2 lb uncooked Jimmy Dean Original Pork Sausage
- 2 TBS butter (DIVIDED)
- 3 large eggs
- 1/4 cup shredded cheddar cheese
- opt (toppings) we use pico
Instructions
- Place tortillas on a clean work surface. Spread 1/4 lb (4oz) of sausage onto each tortilla thinly end to end.
- Heat skillet or griddle to medium high heat. Melt & spread butter on surface.
- Place the sausage covered tortillas onto hot buttered skillet sausage side down. Cook for 3-4 minutes until sausage is cooked and no longer pink. Flip over and cook tortilla for 1 minute. Remove tortillas to a plate cooked sausage side up.
- On same skillet over medium heat melt another TBS of butter and spread around skillet. Prepare eggs the way you wish. You can scramble, cook over easy, over hard, or make a small omelet.
- Split cooked eggs in half and place each 1/2 on one side of each breakfast smashed taco. Sprinkle with cheese and top with pico or other topping.
- Fold in half and enjoy.
