Brown Gravy Meatloaf

Ingredients

  • 1 1/2 lbs Ground Beef
  • 2 eggs
  • 1 Onion Diced
  • 1/2 cup milk
  • 1 cup panko crumbs or bread crumbs
  • 2 TBS parsley, dried
  • 2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 cup parmesan, shredded

Brown Gravy

  • 4 TBS butter
  • 2 TBS dried onion, or 1/4 cup diced onion
  • 4 cups beef broth or stock
  • 2 TBS corn starch
  • salt, peper, and garlic powder to taste

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl mix together ground beef, eggs, onion, milk panko or bread crumbs, parsley, salt, pepper, garlic powder, and parmesan cheese.
  • Form meat mixture into a loaf on a sheet pan with a lip around it. Or place meat mixture into a loaf pan lightly sprayed.
  • Place in oven for 45 minutes to an hour until no longer pink in center. Allow to rest for 5 minutes before slicing.
  • 15 minutes before meatloaf comes out of oven, make homemade brown gravy. Heat 4 TBS butter in a medium skillet over high heat. Add onions and saute for a few minutes to soften.
  • Add beef broth and bring to a boil. Season with salt, pepper, and garlic powder as needed.
  • Make a slurry with 4 TBS of heated beef broth and 2 TBS corn starch whisked together. Pour into broth and whisk until thickened. Add additional slurry if needed.
  • Pour gravy over meatloaf. Pour over French fries or mashed potatoes. Enjoy.
