Brownie Mix Cookies – Salted Caramel with White Chips

I’ve always made cake mix cookies, but this was a first for brownie mix cookies using a box of brownie mix. Oh my gosh, I’m telling you what, these were so amazing. It absolutely had the brownie consistency. I’ll definitely try to make more different variations.

Brownie Mix Cookies - Salted Caramel with White Chips

Ingredients

  • 1 (18) oz box caramel brownie mix
  • 1/2 cup all purpose flour
  • 2 eggs
  • 5 TBS melted butter
  • 1 TBS wawter
  • 1 cup white chocolate chips

Instructions

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  • In a large mixing bowl, using an electric mixer or stand mixer, mix together dry brownie mix, eggs, flour, butter and water.
  • Once mixed, add chocolate and stir with wooden spoon.
  • Using 1 inch cookie scoop place dough balls onto baking sheet.
  • Smash flat about 1/4 inch using a piece of parchment paper and bottom of a glass.
  • Take caramel in package and squish for about 10 seconds. Cut tip off of package and squeeze dollops of the caramel on top of each cookie disk.
  • Bake for 8-10 minutes until cookie develops a fine thin skin on top and has cracks.
  • Cool for 1 minute on pan and remove to a wire rack to cool completely.
