Caramelized Apples Upside Down Cake

I love this cake.  Those apples are so delicious melted down into the cake.  This recipe is an old fashioned recipe and most ingredients are probably in your pantry.  You don’t need a mixer for this one.  I love how the ends are crispy.

Caramelized Apples Upside Down Cake

Ingredients

Apple Layer

  • 6 apples peel, core, and cut into wedges
  • 1/3 cup butter
  • 2/3 cup brown sugar
  • 3 TBS Water
  • 1/2 tsp cinnamon

Cake Layer

  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 2 tsp Vanilla Extract
  • 2 cups All Purpose Flour
  • 2 tsp baking powder
  • 1 cup milk

Instructions

Preparing Apple Layer

  • Melt butter with brown sugar in a large sauce pan.
  • Add water and cinnamon and stir.
  • Add apples to the pan and soft down to desired consistency.
  • Pour apples into prepared baking bans and pour remaining syrup oven the apples.
  • Grease a 9x9, 10 inch round or (2) 8x8 baking pans.

Preparing Cake

  • Preheat oven to 350 degrees.
  • In a large bowl, cream together butter and sugar.
  • Add eggs one at a time, beating well after each one.
  • Mix in the vanilla extract.
  • In separate bowl mix the four and baking powder well.
  • Pour 1/3 of flour and 1/3 of milk into mixture alternating flour and milk until all mixed.
  • Put dollops of batter over apples and spread evenly to edges.
  • Bake for 45 minutes or until a toothpick comes out clean.
  • Rest cakes for at least 20 minutes.
  • Place a plate over pan and flip pan over onto plate.
  • Cake should pop out.
  • Serve and Enjoy!
