Cheeseburger Casserole

A delicious homemade version of the Cheeseburger Hamburger Helper we all loved.

Equipment

  • large deep skillet
  • 9 x 13 baking dish

Ingredients

  • 1 1/2 lbs ground beef
  • 1 medium yellow onion, diced
  • 2 tsp minced garlic
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 2 tsp Worcestershire sauce
  • 1 (14oz) can diced tomatoes with juice
  • 2-3 cups beef broth
  • 2 cups uncooked dry elbow macaroni
  • 1 cup sour cream
  • 1 1/2 cup cheddar cheese; DIVIDED
  • 1 1/2 cups mozzarella cheese, DIVIDED
  • 1/4 cup milk
  • dried parsley

Instructions

  • In a large skillet over medium high heat, break up and brown ground beef until no longer pink. Drain excess grease. Add onion to cooked ground beef and saute until softened.
  • Stir in minced garlic, salt, pepper, garlic powder, Italian seasoning, and chili powder. Cook for 1 minute. Stir in Worcestershire sauce and diced tomatoes with juice. Stir in beef broth and bring to a boil over high heat.
  • Stir in uncooked pasta. Turn down heat to a medium low. Place lid on and let simmer for 5 minutes. Remove lid and stir. (If you need additional liquid add 1/4 cup broth.)
    Place lid back on for 5 minutes, stir and cook another 5 minutes until pasta is tender. (A total of 15 minutes or so.) Keep checking liquid level.
  • Once pasta is tender, add sour cream, milk and 1/2 cup cheddar cheese. Stir to combine. Pour half of the meat mixture into a 9 x 13 casserole dish and spread evenly. Sprinkle half of the mozzarella cheese on top of meat mixture. Sprinkle 1/2 cup of cheddar cheese on top of mozzarella cheese. Sprinkle with dried parsley.
    Pour rest of meat mixture over the cheese and spread evenly. Top with remaining mozzarella cheese, then cheddar cheese. Sprinkle with dried parsley.
  • Place in preheated 400 degree oven uncovered for 10 minutes or until cheese is melted and golden brown. Casserole should be bubbling.
