Cheeseburger Soup
A comforting ground beef & cheese soup with potatoes.
Equipment
- 6 quart crockpot
- large skillet & spatula
- cutting board & sharp knife
Ingredients
- 2 lbs ground beef
- 1 medium yellow onion, chopped
- 2 ribs celery, diced
- 3 medium carrots, peeled and shredded
- 4-5 medium russet potatoes, peeled and diced
- 3 cloves garlic, minced
- 1 (10.5oz) can cream of celery or mushroom soup
- 4 cups beef broth
- 1/4 tsp salt
- 1/2 tsp black pepper
- 16 oz block Velveeta cheese
- 1/2 cup sour cream
Instructions
- In a large skillet over medium high heat brown ground beef and soften onion. Drain grease and place cooked ground beef and softened onion into bottom of crockpot.
- Place diced potato, carrot, celery, garlic, salt, black pepper, cream of soup, and broth on top of ground beef in crockpot. Stir to combine.
- Slice Velveeta cheese and place on top of soup in crockpot.
- Place lid on and cook for 2-3 hours on high until all vegetables are tender. It could take an extra hour if needed. You can also cook it on low for 4-6 hours.
- Remove lid and stir soup to mix in the melted cheese. Stir in sour cream.
