Cheeseburger Soup

A comforting ground beef & cheese soup with potatoes.

Equipment

  • 6 quart crockpot
  • large skillet & spatula
  • cutting board & sharp knife

Ingredients

  • 2 lbs ground beef
  • 1 medium yellow onion, chopped
  • 2 ribs celery, diced
  • 3 medium carrots, peeled and shredded
  • 4-5 medium russet potatoes, peeled and diced
  • 3 cloves garlic, minced
  • 1 (10.5oz) can cream of celery or mushroom soup
  • 4 cups beef broth
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 16 oz block Velveeta cheese
  • 1/2 cup sour cream

Instructions

  • In a large skillet over medium high heat brown ground beef and soften onion. Drain grease and place cooked ground beef and softened onion into bottom of crockpot.
  • Place diced potato, carrot, celery, garlic, salt, black pepper, cream of soup, and broth on top of ground beef in crockpot. Stir to combine.
  • Slice Velveeta cheese and place on top of soup in crockpot.
  • Place lid on and cook for 2-3 hours on high until all vegetables are tender. It could take an extra hour if needed. You can also cook it on low for 4-6 hours.
  • Remove lid and stir soup to mix in the melted cheese. Stir in sour cream.
