Chicken Nuggets using Canned Chicken

Ingredients
- 2 (10 oz) cans premium white chunk chicken breast
- 1/4 cup bread crumbs (panko, dry stuffing, or cracker crumbs) + extra for coating
- 1 large egg
- 1 tsp mustard or dijon mustard
- 1/4 tsp each salt, black pepper, garlic powder, onion powder, and smoked paprika (you can only add salt if you want or add additional seasonings.)
- oil for frying
Instructions
- Placer a strainer on a bowl. Place both cans of chicken into strainer and using a fork press down on chicken to release liquid into bowl. Taking a smaller bowl press onto chicken to finish releasing any excess liquid.
- Place drained chicken into a food processor and pulse until it is a fine mince.NOTE: instead of a food processor you can place drained chicken on a cutting board and chop it up really fine until it forms a mince.
- Place minced chicken into a large bowl. In a small bowl whisk egg until frothy. Add into bowl with chicken. Add in bread crumbs, mustard, and seasonings (salt, black pepper, garlic powder, onion powder, and smoked paprika. Mix well to combine.
- Fill a small cookie scoop (1 1/2 TBS) with mixture. Place in your hand and form into a tight ball. Form rest of mixture into balls.
- Place extra 1 cup of crumbs into narrow dish. Place chicken balls into dish and roll until fully coated.
- Heat cooking oil in a large deep pot at 350 degrees or medium high heat. Fill pot 1/4 of the way up with oil. You don't need much.
- Once oil is heated to 350 degrees, place the chicken balls in leaving space in between. Take a spatula and smash the balls slightly to allow them to crack.NOTE: do not smash to flat, just slightly.
- Cook until golden brown on one side. Flip over and cook until golden brown on all sides. Should take a few minutes on each side.
- Remove chicken nuggets from pot and place on a paper towel lined plate to drain. Finish easy remaining batches.
- Serve up with your favorite chicken nugget sauce. Enjoy.
