Chicken Tortilla Soup in Crockpot

I love cooking this soup slow all day in my crockpot. My house smells like a Mexican restaurant. After it’s done we love to put fresh cilantro, lime juice, pico, avocado, and the most important ingredient, tortilla strips on top, of course.

Chicken Tortilla Soup in Crockpot

Ingredients

  • 1 - 1 1/2 lbs boneless, skinless chicken breasts
  • 1 (32) oz box Chicken Broth
  • 2 (10) oz cans rotel tomatoes with green chilies
  • 1 fresh lime juiced
  • 1 TBS minced garlic
  • 3 TBS taco seasoning or 1 pkg taco seasoning. (Check out my blog recipe for homemade taco seasoning.)
  • 1 tsp cumin to taste
  • 1 cup Heavy Cream
  • 1 1/2 cups Corn frozen, or canned
  • garnishes (tortilla strips, avocado, cilantro, shredded cheese)
  • Salt & Pepper to taste

Instructions

  • Place chicken, broth, rotel, lime juice, garlic, taco seasoning, corn, cumin, salt & pepper in crockpot.
  • Cover & cook on low for 8-9 hours or 5-6 hours on high.
  • Remove chicken and shred. Place back into crockpot and add heavy cream, cilantro, salt & pepper to taste.
  • Serve with desired garnishes.
