Chunky Monkey Brownies

Equipment

  • large mixing bowl
  • measuring spoons & cups
  • 9 x 13 baking dish
  • electric hand mixer
  • spatula
  • small bowl & fork
  • non-stick cooking spray

Ingredients

  • 1 cup butter, softened q
  • 2 large eggs
  • 1 1/2 cups brown sugar, packed
  • 1/2 cup white granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 2 medium bananas, mashed
  • 2 1/2 cups semi-sweet chocolate chips (DIVIDED)

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
  • In a large mixing bowl, using an electric hand mixer, beat together butter, eggs, brown sugar, granulated sugar, salt, and vanilla until smooth.
    NOTE: butter should be very soft. heat in microwave for 10-15 seconds at a time until very soft.
  • Add in flour and banana. Beat again until combined.
  • Fold in 2 cups of chocolate chips.
    NOTE: Batter will be thick.
  • Place batter into prepared baking dish and smooth evenly. Sprinkle remaining chocolate chips on top of batter evenly.
  • Bake in preheated oven for 35-40 minutes until toothpick comes out clean inserted into center of brownie.
  • Remove and allow to cool completely before serving.

    I just made these as part of my pastor’s birthday gift (along with my famous blueberry lime pound cake) and of course I had to try one for quality control. 😁 They’ve very good, and I expect they’ll be even better when they’ve cooled and firmed up a bit. I love anything chocolate chip, but I have a friend who can’t eat chocolate, so I’m going to try them with either peanut butter or butterscotch chips, since both go well with banana. Thanks for the recipe!
