Coleslaw Pasta Salad
A delicious 2 in 1 summertime salad. Bringing 2 of your favorite sides and blending them together with a yummy dressing to pull it altogether.
Ingredients
Pasta
- 1 lb box ditalini pasta (or other favorite)
- 1/2 TBS salt
Salad Ingredients
- 1/4 medium cabbage, shredded (3-4 cups)
- 1 medium carrot, shredded
- 1 bell pepper, diced (any color)
- 3 green onions, sliced thin
- 2 TBS fresh parsley, chopped small
- 8 oz whole kernel corn, drained
- 4 oz block cheddar cheese, diced small
Dressing Ingredients
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup sweet pickle relish
- 1 TBS white granulated sugar
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions
- Cook pasta in salted boiling water per instructions on back of package. Drain, rinse under water until cool. Pat pasta dry and place in a large bowl.
- While pasta is cooking prepare cabbage, carrot, bell pepper, green onion, parsley, corn, and cheese. Add to drained cool pasta in bowl. Mix together.
- In a medium bowl mix together mayonnaise, sour cream, relish, sugar, salt, black pepper, onion powder, and garlic powder. (Taste for any additional seasoning or flavor.)
- Pour dressing over salad ingredients in large bowl and mix well to combine.
- Enjoy right away or cover and refrigerate to chill. You can half this recipe.
