Country Club Chopped Deli Salad

A take on a country club sandwich at Jimmy John's Sandwich. All chopping, no cooking. Whip up a simple but delicious dressing to pull it all together.

Equipment

  • cutting board & sharp knife
  • large serving bowl or 2 separate medium salad bowls
  • medium bowl & small wire whisk
  • small whisk
  • measuring spoons & cups

Ingredients

This salad recipe makes 2 servings

  • 2 cups washed & chopped romaine lettuce (cut into bite size pieces)
  • 4 thin slices deli smoked turkey (cut into bite size pieces)
  • 4 thin slices deli black forest ham (cut into bite size pieces)
  • 4 thin slices deli rotisserie chicken (cut into bite size pieces)
  • 2-3 slices provolone cheese (cut into bite size pieces)
  • 12 cherub cherry tomatoes (cut into quarters)
  • 4-6 mild jarred banana peppers
  • 1 bag croutons

Dressing for Salad

  • 1/2 cup mayonnaise
  • 1 tsp yellow mustard
  • 1 TBS juice from jarred banana peppers
  • 2 TBS olive oil
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Place 1 cup of lettuce into each serving bowl or plate. Top with chopped deli meats, cheese, tomatoes, and banana peppers.
  • In a separate medium mixing bowl whisk together all ingredients for salad dressing. Drizzle dressing over both salads. Top with croutons. Enjoy.
