Cracked Out Chicken & Pasta Casserole
A delicious hearty casserole made very easy to put together. Everyone will enjoy this one.
Equipment
- medium sauce pan, to boil pasta
- large deep skillet
- 9 x 13 baking dish
Ingredients
- 1 1/2 cups elbow macaroni, uncooked
- 3 TBS butter
- 1/2 yellow onion, diced
- 1 (10.5oz) canned cream of chicken
- 2 cups sour cream
- 1/4 cup milk
- 4 oz cream cheese, softened
- 1 oz (3 TBS) ranch seasoning dry mix
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked bacon bits, DIVIDED
- 2 cups cooked chicken breast diced (I use rotisserie)
- 2 cups shredded cheddar cheese, DIVIDED
- 3 green onions, sliced thinly
Instructions
- Cook elbow basta per instructions on back of package until al dente. Drain and set aside.
- In a large skillet over medium high heat, melt butter until it sizzles. Add in onions and saute until softened about 2 minutes. Stir in cream of soup, milk, sour cream, ranch seasoning mix, cream cheese, garlic powder, salt & pepper until cream cheese has melted and everything is combined.
- Turn off burner. Stir in cooked chicken, 1 3/4 cups cooked bacon, and 1 1/2 cups of shredded cheddar cheese.
- Spray a 9 x 13 baking dish and pour mixture in spreading it evenly.
- Sprinkle remaining cooked bacon, remaining cheddar cheese and the sliced green onions all on top of the mixture.
- Bake in 375 degree preheated oven for 30-35 minutes until top layer of cheese is melted. Enjoy.
made this for my husand and myself, it was so gosh darn good . had to share it with his coworkers, went fast. made again for the church lunchen and it didn’t make it long either. thanks for showing us some homemade easy recipes.
