Creamy Cucumber & Radish Salad

Perfect Summer Side or Salad. Cool and Refreshing. No cooking.

Equipment

  • large serving bowl

Ingredients

  • 2 large cucumbers, peeled and sliced thin
  • 1/2 red onion, sliced thin
  • 5-7 large radishes sliced thin (or 10 medium or small radishes)

Dressing

  • 1/2 cup sour cream
  • 2-3 TBS fresh dill, chopped
  • 3 TBS white distilled vinegar or apple cider vinegar
  • 3 TBS white granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • In a large bowl fill halfway with water. Add a few tsp of salt. Place cucumber, red onion and radish slices. Mix and make sure the ingredients are covered with the salt water. Cover and place in refrigerator for 1 hour. (NOTE: you do not have to refrigerate for 1 hour if under a time constraint. Just leave in salted water long enough to make the dressing.)
  • In a small or medium bowl mix together sour cream, fresh dill, vinegar, sugar, salt & pepper.
  • Drain water from bowl of cucumber, onion and radish. Stir in dressing. Cover and refrigerate until ready to serve. Enjoy.
