Crockpot BBQ Beef Short Ribs
Delicious Dry Rubbed Beef Short Ribs Slow Cooked in the Crockpot and Oven Broiled with our Favorite Barbecue Sauce.
Equipment
- 6 qt crockpot/slow cooker
- large skillet
Ingredients
- 6-8 beef short ribs
- 2 yellow or white onions sliced
- 2 TBS cooking oil
- 10 oz water, beef broth or beer
- 1 cup favorite barbecue sauce
DRY RUB INGREDIENTS
- 2 tsp salt
- 2 tsp black pepper
- 3 tsp garlic powder
- 3 tsp onion powder
- 2 tsp dry oregano
- 2 tsp paprika
- 2 tsp brown sugar
Instructions
- In a small bowl whisk together all dry rub ingredients (salt, pepper, garlic powder, onion powder, dry oregano, paprika, and brown sugar).
- Rinse and pay dry short ribs. Rub prepared dry rub seasoning blend on all sides of the ribs.
- In a large skillet heat cooking oil over medium high heat until oil is hot. Place ribs into skillet and sear 4 minutes on each side and 2 minutes on each end of the rib. This sear will lock in delicious flavor and give it a nice color. (Do ribs in batches if needed.)
- Spray inside of crockpot with a non-stick cooking spray. Place seared ribs into crockpot.
- In the same skillet over medium high heat, place sliced onions in and cook for just a few minutes to absorb the delicious seasonings left over from the ribs. (This is all flavor.) Place cooked onions over ribs in crockpot.
- Pour 10oz of water, beef broth, or beer into crockpot over onions and ribs. Place lid on crockpot and cook on high for 4-5 hours or on low 7-8 hours. It will depend on how thick the ribs are. Keep an eye on them at the end of the cooking time and cook longer if needed. The ribs should be falling off the bone tender.
- Carefully take cooked ribs out of crockpot and lay them in a single layer on a foil lined baking sheet. Brush on or your favorite bbq sauce. Place in oven that's been preheated to the BROIL setting and cook for 3-5 minutes. Keep an eye on them.
- Remove from oven, flip over ribs, brush sauce on this side and place back in oven on BROIL for an additional 3-5 minutes until sauce is sticky and caramelized. Remove from oven and let rest for 5 minutes. Enjoy.
It’s a good recipe – easy to do – but I added a 1/2 cup of red wine to the beef broth for a little more pizzazz. We enjoyed it!
